Gelato al cioccolato e whisky

1.75L double cream
450ml milk
4 fresh vanilla pods split iengthways
15 egg yolks
350g caster sugar
450g best quality bitter sweet chocolate broken into small pieces
200ml whisky
Follow the instructions for making Vanilla Ice Cream (qv) until the mixture has thickened. Whilst still warm add the chocolate and stir until it has melted.
Leave to cool then add the whisky.
Pour into an ice cream machine and churn until frozen or freeze in a suitable container.
Serves 10
