creamy rice pudding
70g round pudding rice
850 ml milk
60g golden granulated sugar
A vanilla pod or cinnamon stick
15g butter cut into flakes
140 ml single cream
A 1.45l ovenproof dish greased
Set the oven at Gas Mark 2 300 degrees F 150 degrees C.
Put the rice milk sugar and vanilla pod or cinnamon stick into the prepared dish and stir gently.
Dot with the butter.
Bake for 2 hours stirring from time to time.
Remove the vanilla pod or cinnamon stick.
Stir in the cream.
Cook for a further 30 minutes.
Serve the pudding warm.
Note: a few seedless raisins or sultanas can be added to the pudding with the cream.
