225g oysters shelled
1 small egg
1 tablespoon cornflour
2 teaspoons water
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon groundnut oil
2550g toasted breadcrumbs
570ml groundnut oil

Roasted Salt and Pepper
Drain the oysters in a colander and then pat them dry with kitchen paper.
Prepare a batter by mixing the egg cornflour water baking powder salt and 1/2 teaspoon of oil together in a small bowl.
Let the mixture sit for about 20 minutes.
Then dip some of the oysters into the batter and then in the breadcrumbs.
Set them on a plate.
Prepare all the oysters in this way.
Heat the oil in a deep fat fryer or large wok.
When it is almost smoking deep fry the coated oysters until they are golden brown. (This should take just a few minutes.)
Drain them on kitchen paper and serve with Roasted Salt and Pepper or lemon wedges.
Oysters are a favourite of the Hong Kong Chinese. The variety found in the South China Sea is quite large and they are usually cut up dipped in batter and deep fried. The Chinese never eat oysters raw believing them to be unhealthy when uncooked. This dish is based on a recipe given to me by a friend who is a chef in the fishing village of Lau Fau Shan in the New Territories in Hong Kong. I have added a Western touch to it by using breadcrumbs on top of the batter. This dish makes an excellent cocktail snack.
