fresh coriander chutney
50g fresh coriander leaves roughly chopped
75g creamed or grated fresh coconut
a small knob of fresh ginger peeled and grated
2 cloves of garlic crushed
1 tbsp of lime juice
2 small green chillies seeded and finely chopped
Put the coriander leaves with half a teaspoon of salt into a blender or mortar.
Blend or grind until the leaves have broken down a little then add the other ingredients slowly blending to a smooth paste adding a little water if the mixture appears heavy.
The coriander paste can be stored for a few days in the refrigerator.
This is not a chutney in the pickle sense but in the indian way as a spicy spread or paste to accompany meat or poultry. I have been known to spoon the green sludge into a baked potato.
