fruit crumble
680g prepared fruit (cooking apples peeled cored and sliced sliced rhubarb plums halved and stoned fresh raspberries or blackberries)
6085g golden granulated sugar (to taste)
For the topping
230g plain flour
60g porridge oats
140g butter or margarine
85g golden granulated sugar
1 egg yolk size 3
A 1.7l shallow ovenproof baking dish buttered
Set the oven at Gas Mark 4 350 degreesF 180degreesC
Layer the fruit in the dish sprinkling the layers with the sugar.
Add a tablespoon of water (omit if using frozen fruit).
Mix the flour with the oats.
Rub in the butter then stir in the sugar and the egg yolk until the mixture forms large crumbs.
Spoon the topping over the fruit?do not press it down too much.
Bake for 45 to 55 minutes until the fruit is cooked and the crumble topping is golden.
Serve warm with homemade custard icecream or yogurt.
Variations: replace the porridge oats with chopped nuts or ground
almonds. Add a little mixed spice or some dried fruit. Add a little ground ginger to the crumble topping and some chopped stem ginger to the fruit?this is especially good with rhubarb and apple.
