1 crisp lettuce (or 12 blanched cabbage leaves)
725g new potatoes scrubbed
275g green beans topped and tailed
1/2 cucumber washed and halved lengthways 4 hard boiled eggs
775g small tomatoes skinned and halved
225g beansprouts
For the sauce:
4 tbsp crunchy peanut butter
1 tbsp soy sauce
2 tsp fresh lemon juice
2 tsp soft brown sugar
125ml water
