5cm cube fresh ginger
4 tbsp distilled white
vinegar
4 tbsp sugar
1/4 tsp salt
Even though this is a japanese relish I keep it on hand to
serve with Westernstyle roast lamb and grilled chicken.
method
Peel the ginger and cut it crossways into very thin slices.
Stacking a few slices at a time together cut them into very fine julienne strips.
Combine the vinegar sugar and salt in a bowl and mix well until the sugar is dissolved. Put in the ginger and stir.
Set aside for at least 1015 minutes.
Lift the ginger shreds out of the liquid before serving.
Serves 4
