450g green beans topped and tailed
100g button mushrooms trimmed and sliced
1 lemon quartered to serve
Sauce:
1 garlic clove peeled and finely chopped
1 medium onion peeled and finely chopped
4 tablespoons olive oil
120ml dry white wine
120ml water
1 tablespoon tomato puree
8 coriander seeds crushed
a few stalks of savory if available or fresh parsley
salt
freshly ground black pepper
Fry the garlic and onion in the oil over low heat for 10 minutes stirring frequently.
Add the remaining sauce ingredients adding plenty of pepper bring to the boil cover and simmer for 5 minutes.
Add the beans and mushrooms cover and simmer for 2530 minutes or until the vegetables are tender but still crisp.
Check the seasoning and adjust if necessary.
Turn the vegetables and sauce into a serving dish and allow to cool.
Cover and refrigerate.
Serve cold.
Serves 4
