grilled summer chicken salad with new potatoes green beans and tomatoes
2 pounds small red potatoes
1 pound green beans cut into 2inch pieces
1 cup olive oil
6 tpoons fresh lemon juice
6 boneless skinless chicken breast halves
1 teaspoon salt
3 tablespoons chopped fresh basil
1 teaspoon minced fresh thyme or 1/2 teaspoon dried thyme
1 clove garlic crushed
1/2 teaspoon ground pepper
1 tablespoon dijon mustxd
1 cup red cherry tomatoes halved
1 cup yellow cherry tomatoes halved
1 red bell pepper seeded de ribbed and cut into strips
1 cup nicoise oliives pitted and halved
3 tablespoons capers drained and rinsed
3 cups rocket leaves
salt to taste
Cook potatoes in salted boiling water until tender (about 12 minutes).
Drain let cool and cut into quarters. Cook beans in salted boiling water until crisptender about 3 minutes.
Drain under cold water and let cool.
Light a fire in a charcoal grill or pr eheat a gas grill or broiler.
In a small bowl whisk half of oil and half of lemon juice together.
Brush chicken on bath sides with this mixture and sprinkle with salt.
Grill or broil chicken for about 4 minutes on each side.
Let cool and cut into 1/2 inch strips.
Whisk remaining oil remaining lemon juice basil thyme garlic pepper and mustard together.
Put chicken strips in a large bowl and combine with potatoes green beans tomatoes bell pepper olives capers and rocket.
Toss with dressing and add salt.
