cranberry chutney

700g fresh cranberries

300m1 malt vinegar

225g sultanas

100g raisins

100g sugar

15g salt

2 tsp allspice

2 tsp ground cinnamon

Wash and pick over the cranberries.

Place them in a saucepan with the remaining ingredients and stir over a gentle heat until the sugar has dissolved.

Bring to simmering point.

Cover and transfer to the simmering oven for 45 minutes to 1 hour until the mixture has thickened.

Pour into warm sterile jars.

Seal when cold with acid resistant tops. Keeps for 6 months.

Cranberries are available at christmas and this recipe makes a chutney that looks festive on the plate with cold meats and cheeses. Make about one month before it
