devilled chicken
12 chicken thighs skinned
salt and freshly ground black pepper
sauce:
1 rounded tablespoon apricot jam
1 teaspoon djon mustard
a good pinch of cayenne pepper
1 large clove garlic crushed
1 tablespoon worcestershire sauce
3 tablespoons tomato ketchup
1 tablespoon soy sauce
Season the chicken thighs well on all sides and put in the roasting tin well greased and seasoned.
Measure the jam into a basin add the mustard cayenne garlic and worcestershire sauce and blend well until smooth.
Add the other ingredients season with black pepper and a little salt and pour over the chicken coating evenly.
Slide the roasting tin on to the top set of runners in the roasting oven and cook for alxmt 15 minutes until golden brown.
To test when the chicken is done prod the thickest part with a fine skewer.
If the juices run out clear the chicken is done; if pink give the chicken a little longer.
Serve hot with rice and a green salad.
This recipe couldnt be easier and its very popular with the young. It would be good perhaps for supper in the kitchen.
