drop scones
150ml milk
1 large egg
100h plain flour
1 tsp salt
1 tsp sugar
50g butter
2 tsp baking powder
cooking oil for greasing
Measure the milk in a 1 litre jug and add the egg flour salt and sugar to the lug.
Stir together and leave to stand in the jug for 30 minutes or overnight in the refrigerator.
Warm the butter to melt in a small ovenproof bowl or ramekin in the simmering ovenor on the side of the aga.
Just before cooking wipe the simmering plate sparingly with kitchen paper dipped in a little cooking oil.
Stir the butter and baking powder into the batter and pour 6 to 8 puddles of batter approximately 50mm in diameter directly onto the simmering plate.
When bubbles appear on the surface flip over with a palette knife or fish slice and allow to brown on the other side.
Stack the cooked drop scones on a folded napkin on a plate.
Repeat making more drop scones to use up the batter.
Serve immediately with butter.
aga tip: if any left over drop scones need reheating then put them briefly on the simmering plate with the lid down for 10 to 15 seconds. Tiny drop scones are as an excellent substitute for blinis; serve topped with sour cream dill and smoked salmon for canapes. For ease have your batter ready mixed with only the final ingredients is odd just before cooking. Serve hot and freshly made.
