ham and cheese millefeuille
450g puff pastry
225g onion finely chopped
175g eating apple grated
75g ham minced coarsely
50g butter
1 bay leaf
50g frozen chopped spinach
25g flour
300ml milk
175g gruyere cheese grated
1 grating of nutmeg pepper
beaten egg for glazing
Roll out half the pastry to an oblong about 280 x 125mm.
Place on a baking sheet and prick it all over with a fork.
Bake in the roasting oven on the second set of runners from the top for 15 to 20 minutes until risen and golden brown.
Prepare a sauce with half the butter melted in a saucepan.
Stir in the flour and spinach.
Cook for 1 to 2 minutes then stir in the milk nutmeg and pepper.
Boil until thickened and stir in half the grated cheese.
Set aside to cool.
Melt the remaining butter in a saucepan and sauce the onion.
When softening add the grated apple and bay leaf cover and cook gently in the simmering oven for 15 minutes.
To assemble spoon the onion mixture over the pastry base.
Top with the ham followed by the spinach sauce.
Sprinkle over the remaining cheese.
Roll the remaining pastry to an oblong slightly larger than the base.
Carefully lay this on top of the filling and tuck under any raw pastry edges to make a secure parcel.
Brush the pastry well with the egg glaze mark a lattice pattern over the pastry. Sprinkle with coarse sea salt.
Bake with the shelf on the bottom set of runners of the roasting oven.
Slide in the baking tray and bake for 30 to 40 minutes until pastry is puffed and golden brown.
Serve warm.
Any leftover ham or turkey can be used for this recipe.
The minced ham can be replaced with the same quantity of other cold cooked minced meat.
