hot breakfast fruits

100g prunes

175g dried apricots

3 bananas

3 tbsp honey

grated rind and juice of 1 lemon

6 tbsp orange juice

Place the prunes and apricots in a basin. Cover with boiling water and allow to stand for several hours or overnight until plumped up.

Stone the prunes and lay them in an ovenproof dish with the apricots and the bananas cut into chunks.

Drizzle over the honey add the lemon juice and rind and toss the fruit.

Pour over the orange juice.

Cover with a lid or foil.

For the two oven aga put the shelf on the floor of the roasting oven and cook the fruit for 20 minutes.

For the four oven aga put the shelf on the second set of runners from the top of the baking oven.

Cook the fruit for about 30 minutes.

Serve.

Warm croissants and fruit make a delicious alternative to the usual breakfast and a very healthy one. The fruit is equally nice at room temperature.

Serves 6
