salsa verde

25g white breadcrumbs

75g mixed basil and flat leafed parsley

2 garlic cloves

3 anchovy fillets

2 tbsp lemon juice

salt and freshly ground black pepper

100ml olive oil

Place the white breadcrumbs mixed basil and flat leafed parsley garlic cloves anchovy fillets lemon juice and salt and pepper in a food processor.

Process for 1 to 2 minutes or until evenly combined.

With the motor running gradually add olive oil.

The salsa verde can be stored in the fridge covered tightly for up to one week. This sauce is also delicious served with cold trout salmon or turkey.
