scrambled eggs

8 eggs

salt and freshly ground black pepper

50g butter

Beat the eggs well adding plenty of salt and black pepper.

Melt half the butter in a heavy nonstick pan and add the beaten eggs.

Stir with a wooden spoon over a very gently heat on the side of the simmering plate until they just begin to thicken.

Add the remaining butter and continue stirring over the heat until the first scrambled pieces appear.

Remove the pan from the heat immediately and continue stirring the scrambled eggs will finish cooking in the heat from the saucepan without becoming rubbery in texture.

Serve immediately.

Everyone has their own favourite method of cooking scrambled eggs but for the best results use the freshest eggs possible and plenty of butter. The eggs should be evenly creamy when cooked not half liquid and half set.
