A great way of smoking food is to take the large roasting tray line with foil and spread wood chips on it. Place the large grill rack on top of wood and then put whatever you are going to smoke on the rack and cover with a tent of foil sealing the edges carefullychicken is delicious done this way for salads. Place the tin directly onto the floor of the roasting ovenand leave for about 10 minutes to get the wood smoking then transfer to the simmering ovenfor about 30 minutes until the food is cooked. Remove from ovenand let the whole thing cool. Then take off the foil and test for “doneness”. This whole process needs to be tested with various types of wood and the unique characteristics and temperatures of each aga may affect cooking times.
