spiced pot roast of pork
25g butter
1 tbsp groundnut or sunflower oil
salt and freshly ground black pepper
1.5kg joint spare rib or boneless shoulder of pork
2 large onions roughly chopped
2 cloves garlic halved
3 large bay leaves
1 cinnamon stick broken
8 cloves
2 tspn cardamom pods lightly crushed
150m1 milk
3 tbsp calvados
4 tbsp creme fraiche or double cream

Choose a small casserole that will just take the pork and heat the butter and oil together in it on the boiling plate. Season the pork then brown it all over in the hot fat if there is a reasonable piece of fat on the joint it may spatter a bit when that side is being browned.
Squeeze the onions and garlic into the casserole down the sides of the pork then add the spices and pour in the milk.
Cover and cook in the roasting ovenfor 30 minutes then transfer to the simmering ovenfor 4 to 5 hours or until completely tender.
Dont put the casserole on the floor of the ovenas you dont want the milk to catch.
You also want an all round heat for pot roasting.
Strain the sauce from the pork and press it through a sieve to remove all the seasonings and vegetables.
Boil the sauce quickly until reduced by about twothirds then add the calvados and cook for a further 12 minutes.
Stir in the cream then season to taste.
Carve the pork into rough slices then serve with the sauce spooned over.
This is a wonderful dish cooking pork in milk is a traditional way of producing a tender casserole or pot roast and the addition of the spices makes a subtly different dish.I1 recommend roast root vegetables to go with it.
