450g minced beef
large clove garlic peeled and crushed
1 tsp ground cumin
1 tsp oregano
12 tsp paprika depending upon taste
salt and pepper
400g can of tomatoes
400g can of kidney beans drained
box of taco shells
In a large saucepan brown the meat on the boiling plate.
Add the garlic and all the herbs and spices. Stir well frying for 1 to 2 minutes.
Blend the tomatoes and beans together until both are chopped but not pureed.
Add these to the meat and stir well.
Cover and bring to the boil.
Transfer to the simmering oven for an hour. The mixture should be thick.
Taste and season.
Warm the taco shells in the roasting oven for 4 to 5 minutes.
Allow 2 to 3 shells per person.
Hand round shredded cabbage and grated cheese to top the meat in each shell.
I find this texmex idea useful for eating in the hand. The small amount of paprika makes the dish warming and the taco shells make it easy to pass round. Have some finely shredded cabbage and grated cheese to sprinkle on the top.
