thai chicken
1 large chicken jointed or 8 chicken joints
3 tbsp coriander freshly chopped
Marinade:
2 limes grated zest and juice
1 large piece fresh ginger root grated and the juice squeezed from it
1 hot fresh red chilli such as birds eye seeded and roughly chopped
1 stalk lemon grass bruised and chopped
4 kaffir lime leaves
2 cloves garlic crushed
1/2 tsp salt freshly ground black pepper 3 tbsp groundnut oil or chilli oil
Mix together all the ingredients for the marinade then add the chicken.
Leave for at least 30 minutes turning the chicken pieces over from time to time.
Heat a ridged grill pan on the floor of the roasting ovenfor 10 minutes.
Shake the chicken pieces dry then place them on the griddle and press down firmly to mark the meat.
Cook for 10 minutes on the floor of the oventhen turn the joints over and cook for a further 15 to 20 minutes until cooked through.
Serve garnished with the coriander.
The marinade may be simmered for 5 minutes then strained before being spooned over the chicken.
Serves 4
