Ok–Here it is! I did the dough in my bread machine–I will follow with
those instructions.
4 to 4 1/2 cups all purpose flour
1 package active dry yeast
1 1/2 cups milk
1/4 cup sugar
2 tbsp cooking oli
1 tsp salt
2 tbsp salt
3 quarts boiling water
1 slightly beaten egg white
1 tbsp water
sesame seed, poppy seed, or coarse salt
In a mixing bowl stir together 1 1/2 cups of the flour and the yeast. In a saucepan heat and stir the milk, sugar, oil and the 1 teaspoon salt til warm (120-130 degrees). Add to the flour mixture. Beat with an electric miser on low speed for 30 seconds, scraping bowl constantly. Beat on high speed for 3 minutes. Using a spoon, stir in as much of the remaining flour as you can.
Turn out onto a lightly floured surface. Knead in enough of the remaining
flour to make a moderately stiff dough that is smooth and elastic (6 to 8
minutes total). Shape dough into a ball. Place dough in a greased bowl;
turn once to grease surface. Cover and let rise in a warm place until
double (about 1 1/4 hours).
