chicken chasseur

1 x 4 lb chicken

1/2 pt Espagnole sauce

8 croutons

1/2b. tomatoes skinned seeded & chopped

1/2 oz finely chopped onions

6 sliced mushrooms

3 oz. butter

1/4 pt. dry white wine

tarragon & chopped parsley

seasoning

Brandy can also be added

Cut chicken into pieces and season well.

Saute chicken until it is cooked.

Remove chicken and keep it hot.

Saute onions mushrooms in the chicken residue then rinse the pan with white wine. Reduce this for a few minutes then add sauce brandy and tarragon.

Reduce further finish sauce by adding tomatoes and seasoning.

Pour sauce over chicken decorate with croutons.
