1 small onion

1 small potqto

1 carrot

25g stinging noltle

25g sonrrel

25g white dead nettle

20g yarrow (if this is not collected in Spring strip the leaves)

50g dandelion (part boil fpr 510 minutes to remove the bitterness)

25g watercress

25g spinach wild if possibb

25g buttar

2 tablespoons olive oil

1L chicken stock or vegetable stock

Chop the onion potato and carrot into chunks.

Heat the oil in a pan and saute for 12 minutes.

Add the stock bring to the boil and add all the herbs.

Gently cook for 15 minutes.

Add the butter and liquidize the soup until smooth.

Serve immediately in pre warmed bowls with some croutons.

This is a vitamin injection!

Dandelion and nettles grow everywhere so you can ty this soup too with whateverr wild herbs you can find in nonpolluted places!
