450g potatoes peeled

60g butter

450g canned sardines salmon or tuna

juice of half a lemon 1 egg beaten

fine oatmeal breadcrumbs or cornmeal for dusting

oil for frying

wedges of lemon and parsley sauce to serve

Cook the potatoes cut into large pieces in boiling salted water till tender.

Drain and mash with the butter.

Mash the sardines salmon or tuna with a fork and stir in the lemon juice and the mashed potato.

Season the mixture with salt and black pepper you probably wont need much salt.

Set aside to cool a little.

Place the beaten egg in a shallow bowl.

Put the oatmeal breadorumbs or cornmeal on a plate.

Dust your hands with a little flour then take large scoops of the fish mixture and gently roll them in your hands until they are round and flat about 7cm in diameter (though you can make them as large or as small as you like).

You will end up with about 8 fish cakes.

Dip the fish cakes in the beaten egg and then in the oatmeal.

Roll them around until they are covered.

Drop them into shallow hot cooking oil and fry till golden.

Serve with wedges of lemon and parsley sauce.
