garden salad
1 small cauliflower broken into florets 1 1/2 cups shelled fresh peas
1 bunch radishes trimmed
4 green onions chopped
2 tablespoons chopped parsley
salt and pepper
sprigs of mint and chopped flatleaf parsley to garnish
mint dressing:
6 tablespoons mayonnaise
3 tablespoons plain yogurt
7 tablespoons water
1/2 garlic clove minced (optional)
2 tablespoons finely chopped fresh mint
salt and pepper
Bring a saucepan of water to the boil and add the cauliflower florets.
When the water returns to the boil cook the florets for about 3 minutes until just tender.
Drain and refresh under cold running water then drain thoroughly and set aside to cool.
Add the peas to a saucepan of boiling water.
Cook for 4 minutes then drain refresh and cool as for the cauliflower.
Combine the cauliflower peas radishes and green onions in a serving bowl.
Add the parsley with salt and pepper to taste.
To make the dressing stir all the ingredients together in a small bowl. Adjust the seasoning to taste.
Serve the dressing on the side or drizzle over the salad and toss lightly before serving.
Garnish with sprigs of mint and chopped flatleaf parsley.
Cauliflower peas and crisp rosy radishes with a creamy mint dressing this salad is evocatve of an English vegetable garden.
