12 button onions peeled
pinch caster sugar
Salt and pepper
50g butter
50ml demi glace (qv)
Place the onions sugar salt and pepper in a saucepan and just cover with water.
Cover with a paper cartouche (a circle of greaseproof paper cut the same diameter as the pan with a small hole in the middle to let the steam escape) and cook slowly until the water has evapourated.
When the onions are tender saute lightly in the butter.
For added colour and flavour finish them in the demiglace.
Serves 4
