2 cups watercress leaves
2 cups butter lettuce leaves torn into bite sized pieces
1 cup seedless grapes
1/2 cup (2 ounces) pine nuts toasted
1/2 cup (2 ounces) crumbled roquefort cheese
3 tablespoons balsamic vinegar
6 tablespoons extra virgin olive oil
1/2 teaspoon mild mustard
salt and freshly ground pepper to taste
In a medium bowl combine watercress lettuce grapes pine nuts and cheese. Whisk vinegar oil and mustard together. Toss with salad.
Add salt and pepper.
Almost any variety of grapes will do but a mix of colours makes this salad an even more sparkling beginning to a meal
