jacket bananas with cardamon orange syrup
4 unskinned bananas
Seeds from 20 cardamom pods lightly bruised (discard the husks)
Juice of 4 oranges
Juice of 2 lemons
90g light muscovado sugar
90g caster sugar (or vanilla sugar if you have some)
80ml brandy (optional)
Creme fraiche to serve
Bake the bananas in a 200C/400F/Gas Mark 6 oven for about 25 minutes or until black and yielding when prodded.
Meanwhile put all the remaining ingredients (apart from the cr6me fraiche) in a pan and simmer until reduced to a thin syrup.
Split open the bananas pour over the cardamom orange syrup and add a spoonful of creme fraiche on top.
Bananas are excellent baked. Ready wrapped in their own skins they can be cooked as they are straight on the oven
shelf. The cardamominfused citrus syrup they are served with is the bees knees.
