lavender ice cream
600ml double cream
l0g lavender flowers plus extra as an optional garnish
4 tbsp runny honey
Bring 300ml cream slowly to the boil.
When it starts to bubble remove from the heat. Place 10g of lavender flowers in a wide jug and Pour the cream over them.
Allow to cool stirring often.
Once cooled strain into a bowl and refrigerate until very cold.
Add the remaining cream to the lavender cream
and whip together until the mixture forms soft peaks.
Then gently fold in the honey.
Pour into a shallow freezer container without stirring seal and freeze for 4 to 5 hours until firm.
Soften slightly in the fridge before serving with a sprinkling of flowers.
Serves 4
