lemon barley water

220g pearl or pot barley

1 lemon

55g caster sugar

Put the pearl barley into a pan with 1.75L water.

Bring to the boil skim off any scum and simmer for 20 minutes.

Peel off the lemon zest in wide strips and place in a bowl with the sugar.

Pour over the hot barley water with me barley and leave to cool stirring once or twice.

Strain and stir in the lemon juice.

Taste and add more: sugar (icing sugar dissoives easily) or lemon juice if it needs it.

Serve chilled.

Homemade lemon barley water is a heavenly refreshing drink.

Makes about 720ml
