40g fresh yeast or 20g dried yeast
100g sugar
150 ml lukewarm milk
450g flour
teaspoon salt
6 eggs
225g butter
75g candied lemon peel chopped
75g candied orange peel chopped
75g glace cherries chopped
200g raisins
1 tablespoon flour
To make the dough cream the fresh yeast with 1 teaspoon sugar and a little of the milk then add the remaining milk. (If using dried yeast dissolve I teaspoon sugar in the milk sprinkle on the yeast and stir well.)
Leave to stand in a warm place for about 10 minutes.
Meanwhile sift the flour and salt into a bowl.
Make a hollow in the centre and pour in the yeast mixture.
Add the remaining sugar and the eggs.
Divide 200g butter into flakes and place on top.
Working from the outside inwards knead to a soft dough.
In another bowl mix the chopped candied peel and chopped glace cherries with the raisins and 1 tablespoon flour.
Knead into the dough.
Grease an 18 cm cake tin put the dough into it cover and leave to rise for 20 minutes.
Bake on the bottom shelf of the oven at 220
