queen of puddings
430 ml creamy milk
30g butter or margarine
2 tablespoons sherry
110g fresh breadcrumbs
The finely grated rind of 1 lemon
85g golden granulated sugar
3 egg yolks size 3
4 tablespoons strawberry jam
For the meringue topping
3 egg whites size 3
170g caster sugar
A 1.45 l ovenproof dish lightly buttered
Gently heat the milk with the butter until melted?do not allow to boil.
Remove from the heat and stir in the sherry breadcrumbs lemon rind and sugar.
Leave to stand for 10 minutes.
Meanwhile heat the oven to Gas Mark 4 350 degrees F 180 degrees C.
Stir the egg yolks into the mixture and mix thoroughly.
Pour into the prepared dish and bake for 35 to 40 minutes or until the pudding is just set.
Warm the jam in a small pan with 1 tablespoon water.
Carefully spread over the hot pudding.
Whisk the egg whites stiffly Add half the sugar and beat until glossy.
Reserve 1 tablespoon of the remaining sugar and fold the rest into the meringue.
Pile the meringue over the pudding and sprinkle with the reserved sugar.
Return to the oven for a further 15 to 20 minutes until lightly browned.
Serve warm.
