2 ripe tomatoes

100mm chunk cucumber quartered lengthways

3 spring onions trimmed

For the dressing:

1 tbsp fresh lemon juice

150ml natural yoghurt

1 tsp salt

1 tsp freeze dried mint

1 tsp freeze dried parsley

Chop the tomatoes into peasized pieces in a bowl to save the juice.

Do the same with the cucumber and spring onions and add to the tomatoes.

Stir the lemon juice into the yoghurt with the salt and herbs and mix with the vegetables if possible to mature for an hour before eating.

Wonderfully cooling with all spicy dishes this is a classic of north indian cookery.
