raspberry fool
7oz raspberries
11/2 oz icing sugar
2 tablespns cherry brandy
3 teaspns powdered gelatine
4 fl oz double cream
2 egg whites
Reserve four raspberries for decoration and put remainder in a food processor
Add icing sugar and blend to a puree.
Sieve to remove seeds.
Mix cherry brandy with one tablespoon of cold water.
Sprinkle gelatine on top.
Put bowl over pan of hot water and stir until geiatine dissolves
Stir into puree.
Whisk cream until it forms soft peaks.
Fold into puree.
Chill for five to ten minutes until mixture thickens.
Whisk egg whites until stiff and fold into puree.
Spoon mixture into individual dishes.
Chill for about one hour until set
Decorate and serve
