40g butter

50g streaky bacon diced

1 onion chopped

1 clove garlic chopped

1 stick celery chopped

1 carrot chopped

1 leek chopped

1 litre stock

50g shell pasta

150g cooked ham

1 tablespoon chopped parsley

50g grated Parmesan cheese

Heat the butter in a soup pan and fry the bacon gently for 2 minutes.

Add the onion garlic and mixed vegetables and fry for 5 minutes.

Add the stock.

Bring to the boil cover and cook over a medium heat for 10 minutes.

Add the pasta and cook for a further 10 minutes.

Cut the ham into narrow strips 2cm long and add to the soup.

Scatter the parsley on top and serve the grated cheese separately.
