salade nicoise

2 cloves of garlic peeled and crushed

basil leaves about 10 shredded

6 tbsps extra virgin olive oil

2 tbsps red wine vinegar

4 large tomatoes ripe and juicy

16 black olives

1 x 200g can of tuna

8 anchovy fillets rinsed and dried

a large handful of green beans lightly cooked

2 large hearts from a Cos or other crisp leafed lettuce

2 hard boiled eggs peeled and quartered

Make the dressing by mixing the garlic basil olive oil and vinegar with a small whisk and seasoning with black pepper.

Because of the anchovies olive

s and tuna only a little if any salt is necessary.

Cut the tomatoes into quarters. You can skin them first if you wish but it is not essential only a nice touch.

Toss them gently with the dressing and add the olives tuna anchovies and cooked French beans and lettuce.

Arrange the hard boiled eggs around the dish.

Optional extras

Any one of the following would be a suitable but far from compulsory addition:

boiled new potates

jerusalem artichokes

skinned broad beans

spring onions chopped

cucumber peeled and thinly sliced

thinly sliced sweet red onions.
