675 g salmon tail fillet
Salt and pepper
60g butter
23 knobs preserved stem ginger finely chopped
30g currants
675 g shortcrust pastry
1 egg yolk
cream sauce
60g butter
300 ml double cream
1 tsp dijon musard
4 tbspn finely chopped fresh herbs parsley chives taraggon chervil marjoram etc
lemon juice
salt and pepper
Season the salmon with salt and pepper.
Mix the butter with the ginger and currants and sandwich the two pieces of salmon together with the mixture cut sides in.
Roll out the pastry to form a rectangle large enough to envelop the salmon.
Place the salmon in the centre bring the edges up and over and seal well.
