500g medium size green prawns
500g white fish fillets
150g vermicelli
1.5L fish stock
4 spring onions chopped
stem of lemon grass 10 cm long
1 tableapoon curry paste
1 teaspoon sambal oelek (qv)
1 teaspoon shrimp paste
1 teaspoon ground turmeric
1 cup coconut milk
11/2 cups finely shredded lettuce
2 tablespoons cbopped mint
Peel and devein prawns cut fish fillets into 2 cm cubes.
Place vermicelli in large bowl.
Pour over hot water to cover.
Stand 10 minutes: drain.
Combine fish stock in a pan with spring onions lemon grass curry paste sambal oelek shrimp paste and turmeric bring to the boil.
Reduce heat to low simmer for 3 minutes.
Add prawns fish and coconut milk simmer for 3 minutes.
Remove lemon grass.
To serve place lettuce and vermicelli into bowls add soup sprinkle with mint.
Water or chicken stock can be used instead of fish stock.
Serves 4
