8 slices of smoked Scottish salmon
8 cherry tomatoes quartered
1/4 cucumber sliced
4 black olives halved
6oz french beans. cooked lightly
2 spring onions chopped
2 hardboiled eggs quartered2
tablespns french dressing
1 tablespn parsley chopped
In a bowl toss the tomatoes cucumber beans spring onion and parsley in the dressing a!ong with half the salmon cut into bitesize pieces.
Pile neatly onto each plate interspersing with egg.
To finish off this delightful starter decorate with a flourish using the other half of the salmon.
