This is a Iovely way to capture the essence of fresh strawberries.
Diluted with fizzy water it makes the prettiest pink drink.
A slug of gin doesnt go amiss either.
220g strawberries hulled and quartered plus a few extra for garnish
A dozen torn up mint leaves
45g caster sugar
Juice of 1 orange
Fizzy mineral water
A few sprigs of mint and/or strawberries to serve
Mix the strawberries with the mint and sprinkle over the sugar and orange juice.
Leave overnight or for at least 4 hours covered in a cool place.
Line a sieve set over a bowl with muslin and tip the strawberry mixture in.
Gather up the ends and squeeze firmly to extract all the juice.
Divide between four glasses and top up with chilled mineral water.
Float mint or a halved strawberry on top.
Serves 4
