900g prepared mixed red summer fruits (raspberries strawberries red currants loganberries)

2 tablespoons kirsch vodka or creme de cassis (optional)

6 thin slices good quality bread from a large loaf crusts removed

A 1.15L pudding basin oiled

Put the fruit and sugar to taste in a bowl with the kirsch vodka or creme de cassis if using.

Toss the fruit gently until evenly coated with sugar.

Cover and leave in a cool place overnight.

Next day transfer to a pan bring to the boil and simmer for 3 to 4 minutes to soften the fruit.

Remove from the heat and leave to cool.

Cut a circle of bread to fit the base of the pudding basin.

Cut fingers of bread to fit the sides overlapping slightly at the bottom of the basin so that it is neatly lined.

Reserve the remaining bread for the top.

Add the fruit to the lined basin and cover with the remaining bread.

Pour over any remaining juice.

Place a weighted saucer on top of the pudding and refrigerate overnight.

To serve turn out and serve with cream or yogurt.

Serves 6
