thai fish cakes
450g skinned and boned haddock or coley
2 tbsps thai green curry paste
2 tbsps coriander leaves chopped
l egg
1 tbsp thai fish sauce
6 lime leaves finely shredded and chopped
ground nut oil for frying
Put all the ingredients except the oil in a food processor with a little salt and whizz briefly to mix.
Over mixing will result in a dull texture.
Shape into little cakes about 7cm in diameter.
Dust very lightly with flour and fry in shallow oil until golden.
Serves 4
Dipping sauce
100ml rice vinegar
90g white sugar
1 tbspn of dark soy
1 small carrot very finely chopped
1 finely chopped medium sized red chilli
1 tbspn of chopped coriander seeds
Boil together rice vinegar and sugar until it goes syrupy (about 5 minutes).
Remove from the heat and stir in dark soy carrot chilli and coriander seeds.
Leave to cool before serving in little dishes.
