tomato sauce
450 ripe tomatoes skinned and chopped
1 small onion finely chopped
1 clove garlic crushed
1 teaspoon tomato puree
1 dessertspoon fresh cbepped basil or 1/2 dessertspoon dried basll
1 tablespoon olive oil
Salt and freshly milled black pepper
The best way to skin the tomatoes is to plunge them into boiling water and let them stand in it for a minute or two then youll find the skins slip off very easily.
Chop up the flesh quite small.
Then heat 1 tablespoon of olive oil in a saucepan and soften the onion and garlic in it for 5 minutes without letting them brown then add the tomatoes tomato puree basil and a seasoning of salt and pepper.
Give everything a good stir then cover the pan and simmer gently for 15 minutes.
After that take the lid off and simmer for a further 10 1 5 minutes for the sauce to reduce slightly.
Serves 2
