treacle pudding with ginger
175g selfraising flour sifted
1tsp ground ginger
110g butter softened
100g dark muscovado sugar
1 tbsp chopped stem ginger plus ginger syrup (from the jar)
2 large eggs
Place everything in a bowl.
Using an
electric mixer beat everything together
until smooth (2 to 3 minutes).
Tip into a lightly buttered 1 litre pudding basin and smooth the top.
Cover and steam for 1 3/4 to 2 hours.
Wait for 5 minutes run a knife around the edges and turn out then drizzle with ginger syrup.
Serves 6
