turkey in sweet and sour sauce
4 portions of turkey breast about 450g total weight cut into 5 x 1cm strips
2 teaspoons cornflour
2 tablespoons vegetable oil
100g mushrooms thinly sliced
15g butter
Sauce
1 1/2 teaspoons cornflour
6 tablespoons water
11/2 tablespoons soft light brown sugar
1 l/2 tablespoons clear honey
3 tablespoons red wine vinegar
3 tablespoons tomato puree
3 tablespoons orange juice
3 tablespoons soy sauce salt
Toss the turkey strips in the cornflour and try them in oil stirring occasionally over moderately high heat for 3 minutes.
Remove the meat and toss it on kitchen paper.
To make the sauce stir the water on to the cornflour to make a smooth paste and stir in all the remaining sauce ingredients.
Bring the sauce to the boil stirring.
Simmer for 1 minute still stirring then add the turkey.
Simmer for 5 minutes over low heat.
Fry the mushrooms in the butter for 2 minutes over moderate heat then stir them into the sauce. Serve hot with rice.
Serves 4
