walnut dressing
3 tablespoons balsamic vinegar or sherry vinegar
1 teaspoon soft brown sugar
1 teaspoon dijon mustard
salt and freshly ground black pepper
1/2 cup walnut oil
1tablespoon finely chopped walnuts
1 tablespoon chopped parsley sage thyme or basil
Combine the vinegar sugar and mustard in a small bowl.
Add salt and pepper to taste.
Stir to mix then gradually beat in the walnut oil a little at a time.
Stir the chopped walnuts and herbs into the dressing and add a little more salt and pepper if necessary.
Nut dressings such as this add interest to pasta or rice salads and are also excellent with mixed salads.
Makes about 1/2 cup
