1 cup(s) all-purpose flour
1/4 cup(s) brown sugar
packed
1/2 teaspoon. baking soda
1 teaspoon. baking powder
1/4 teaspoon. salt
1 1/2 teaspoons. cinnamon
1 cup(s) bran flakes cereal
crushed
1 cup(s) skim milk
6 Tbsp. egg substitute
1 carrot
shredded
1 ripe banana
mashed
1/3 cup(s) chopped walnuts Preheat oven to 375 degrees. Spray an 8×8 inch square baking pan
with nonstick vegetable cooking spray. In a medium bowl
combine
flour
sugar
baking soda
baking powder
salt
cinnamon and cereal.
Mix well. In a small bowl
combine milk
eggs
carrot
banana and
walnuts. Add to dry ingredients. Bake 25 to 35 minutes or until
brown on top. Cut into 12 pieces. Makes 12 servings.
