lemon risotto
25g butter
1 tbsp olive oil
1 1/2 onion peeled and finely chopped
200g risotto rice (arborio or camaroli)
100ml dry white wine
500ml hot vegetable or chicken stock
1 heaped tbsp freshly grated parmesan plus extra for serving
the grated zest of 1 1/2 and the juice of 1 lemon
Heat the butter and oil in a saucepan and gently fry the onion for about 10 minutes.
Add the rice and stir well.
Increase the heat to medium add the wine and continue stirring for 2 to 3 minutes.
Reduce the heat a little and gradually add the hot stock ladle by ladle allowing each ladleful to be absorbed before adding the next.
When ready the rice should be tender on the outside but with a firm bite.
Stir in the parmesan lemon zest and juice salt and pepper.
Stir cover and leave for about 5 minutes before checking seasoning and serving with or without extra parmesan.
Serves 4
