This flat cake with a nougatlike texture rich with candied peel toasted nuts and spices is a particular speciality of the town of Siena. Although it can be served as a dessert to round off a light meal italians would be more likely to serve it with coffee in the morning or midafternoon

75g hazelnuts

75g blanched almonds coarsely chopped

175g candied peel finely chopped

25g cocoa powder

50g plain flour sifted

1/2 teaspoon ground cinnamon

1/4 teaspoon ground mixed splce

125g caster sugar

125g clear honey

To finish

2 tablespoons icing sugar

1 teaspoon ground cinnamon

Spread the nuts on a baking sheet and place under a preheated moderate grill until the skins split shaking frequently.

Turn into a rough towel and rub off the loose skins.

Grind the hazelnuts coarsely.

Place the hazelnuts almonds candied peel cocoa powder flour and spices in a mixing bowl and stir well.

Put the sugar and honey in a pan and heat gently until the sugar has melted.

Boil gently until a little of the mixture forms a soft ball when dropped into a cup of cold water.

Remove from the heat and stir in the dry ingredients.

Press into a lined and greased 2cm loosebottomed flan tin so that the mixture is no more than 1 cm (1/4 inch) thick.

Bake in a preheated cool oven 150
