pork with mushrooms
900g pork fillet cubed
75g plain flour
1 level tsp salt
freshly ground black pepper
350g onions skinned and sliced
75g Presto Creamery butter
450g button mushrooms wiped and sliced
300ml pint chicken stock
100ml Presto Dry British Sherry
Toss the meat in the flour and seasonings to cooL evenly
Fry the onions and meat in the butter till lightly browned
Add thW mushrooms stir in any remaining flour and fry gently for one minute Gradually stir in the stock and sherry
Bring to the boil cover and simmer for3040minutes until the meat is tender
Serves 6
Instead of sherry add dry cider and one chopped cooking apple to the stock
